A classic Indian dessert featuring soft, spongy cottage cheese patties soaked in sweet, saffron-flavored milk and garnished with pistachios and almonds.

**Ingredients:**

**For the Rasamalai Patties:**
– 1 liter whole milk (for paneer)
– 1-2 tablespoons lemon juice (or vinegar)
– 4 cups water
– 1 cup sugar

**For the Sweetened Milk (Ras):**
– 1 liter whole milk
– 1/2 cup sugar (adjust to taste)
– 1/4 teaspoon cardamom powder
– A pinch of saffron strands (soaked in 2 tablespoons warm milk)
– 1 tablespoon chopped pistachios
– 1 tablespoon chopped almonds

#### **Preparation Time:** 1 hour
#### **Serving Size:** 4 servings

#### **Instructions:**

1. **Prepare the Paneer (Cottage Cheese):**
– Boil 1 liter of milk in a large pot. Once it boils, reduce the heat to low and add lemon juice gradually, stirring continuously until the milk curdles.
– Strain the curdled milk through a muslin cloth or cheesecloth to separate the whey. Rinse the paneer with cold water to remove any lemon juice flavor.
– Hang the muslin cloth with paneer for about 30 minutes to drain excess water. Knead the paneer until smooth and soft.

2. **Shape the Patties:**
– Divide the paneer into small portions and shape them into flat, round discs.

3. **Cook the Patties:**
– In a large pan, bring 4 cups of water and 1 cup of sugar to a boil to make the sugar syrup.
– Gently slide the paneer patties into the boiling syrup. Cover and cook on medium heat for 15 minutes. The patties will expand as they cook.
– Once cooked, remove the patties and let them cool.

4. **Prepare the Sweetened Milk (Ras):**
– Boil 1 liter of milk in a thick-bottomed pan. Reduce the heat and let it simmer, stirring occasionally until it thickens slightly (about 20 minutes).
– Add sugar, cardamom powder, and soaked saffron strands (along with the milk) to the boiling milk. Stir well until the sugar dissolves.
– Let the milk simmer for another 5-10 minutes, then remove from heat and let it cool.

5. **Assemble the Rasamalai:**
– Gently squeeze the sugar syrup from the cooked paneer patties and place them in a serving dish.
– Pour the cooled, sweetened milk over the patties, ensuring they are fully submerged.
– Garnish with chopped pistachios and almonds.

6. **Chill and Serve:**
– Refrigerate the Rasamalai for a few hours before serving to enhance the flavors.

#### **Chef’s Tip:**
For a richer flavor, you can add a few drops of rose water or kewra water to the sweetened milk before pouring it over the patties.
