Bamboo Biryani – Mutton
**Description:**
Experience the unique flavors of Bamboo Biryani with tender mutton marinated in aromatic spices, cooked with basmati rice inside bamboo tubes for a rich, earthy taste.
**Ingredients:**
**For the Marinated Mutton:**
– 500 grams mutton, cut into pieces
– 1 cup yogurt
– 2 tablespoons ginger-garlic paste
– 1 tablespoon red chili powder
– 1 teaspoon turmeric powder
– 1 teaspoon garam masala
– Salt to taste
– 2 tablespoons lemon juice
**For the Rice:**
– 2 cups basmati rice, soaked for 30 minutes
– 4 cups water
– 1 bay leaf
– 4-5 green cardamom pods
– 1 cinnamon stick
– 4-5 cloves
– Salt to taste
**For the Biryani:**
– 2 large onions, thinly sliced
– 2 tomatoes, chopped
– 2 green chilies, slit
– 1/2 cup fresh coriander leaves, chopped
– 1/2 cup fresh mint leaves, chopped
– 1/2 teaspoon saffron strands, soaked in 2 tablespoons warm milk
– 3 tablespoons ghee or oil
– Bamboo tubes for cooking

#### **Preparation Time:** 2 hours

#### **Instructions:**
1. **Marinate the Mutton:**
– In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice.
– Add the mutton pieces to the marinade, mix well, and let it marinate for at least 1 hour in the refrigerator.
2. **Prepare the Rice:**
– In a large pot, bring 4 cups of water to a boil. Add bay leaf, cardamom pods, cinnamon stick, cloves, and salt.
– Add the soaked basmati rice and cook until it is 70% cooked. Drain and set aside.
3. **Prepare the Biryani Base:**
– Heat ghee or oil in a large pan over medium heat. Add sliced onions and fry until golden brown.
– Add chopped tomatoes and green chilies. Cook until the tomatoes are soft and oil begins to separate.
– Add the marinated mutton to the pan and cook until the mutton is browned and partially cooked.
4. **Layer the Biryani:**
– In a separate bowl, mix the partially cooked rice with chopped coriander and mint leaves.
– Layer the mutton mixture and rice alternately in the bamboo tubes, starting with the mutton and ending with a layer of rice.
– Drizzle saffron milk over the top layer of rice.
5. **Cook the Biryani in Bamboo:**
– Seal the open end of the bamboo tubes with foil.
– Place the bamboo tubes in a preheated oven at 180°C (350°F) for 45-60 minutes, or until the mutton is fully cooked and tender, and the flavors are well infused.
6. **Serve:**
– Carefully remove the bamboo tubes from the oven and let them cool slightly.
– Gently slide the biryani out of the bamboo tubes onto a serving platter.
– Garnish with additional fresh coriander and mint leaves.
#### **Chef’s Tip:**
For an enhanced flavor, you can smoke the mutton with a piece of hot charcoal before layering it with rice in the bamboo tubes.
